How to disable Windows feature updates?

You can only receive security updates for 18 months after a feature update is released. Each Feature update has a lifespan of 18 month.

In other words, it is all or none.

You should be able to roll back an update, typically for up to 10 days in some cases.

But, either modifying, correcting, or using another application would probably be the best choice.

I still use the Windows Photo Viewer from Windows 7 on my Windows 10 and 11 systems. I find it much faster than the Photos app

Feature updates are different from store apps updates. Those are updated separately from Windows.

Why delete Microsoft Photos?

If you have animated GIF files. The Windows Photos plays animated GIF files.

Don't be trying to tweak and save a few files or programs here and there and in the long run make the computer more unstable or less capable of running things.
